THE GRAPES
100% Chardonnay from 50+ year-old vines planted by founder Fabrizio Bianchi outside Chianti Classico in Barberino Val d'Elsa, on galestro-rich hillside soils.

THE WINE
Bright straw yellow. Intense floral bouquet of mimosa, chamomile, broom, sage, and yellow peach fruit. Soft, elegant palate with pleasant freshness, fine structure, and Burgundian finesse. Fermentation split: 2/3 stainless steel (controlled temp), 1/3 French oak tonneaux (6-7 months on lees) + 1 year bottle aging. Balanced wood integration.

FOOD PAIRING
Soups, fish first courses, grilled fish, fresh cheeses—versatile for refined seafood and white meat dishes.

THE WINEMAKER
Castello di Monsanto's iconic white, Fabrizio Bianchi's "heart project" since 1990. Pioneers of Tuscan Chardonnay with reduced oak since 2000 (now ~30%), they craft elegant, age-worthy whites from historic vines while honoring their Chianti Classico legacy of terroir precision.
