Grape : Nebbiolo (Chiavennasca).
Marco Fay - who has taken over hos dad Sandro - practices organic viticulture and opts for shorter maceration times and barrique-barrel aging for 12 months. The result is a wine that is fresh, familiar and extremely elegant. Powerful yet subtle, intensely expressive yet modest enough to complement a variety of food. In other words : a Pinot Noir in Nebbiolo clothing.
Food pairing : fattier poultry dishes, seared ahi tuna, beetroot salad, a cheese plate of aged parmesan and prosciutto. Undoubtely witht the locals eat, in this case, braseola, a cured beef.
