THE WINE
Oltrepò Pavese. Barbera vinified in white Bianca has conjured a herbal, mineral and lemony wine with a pale yellow hue and delightful floral, spicy and appley nuances. An intriguingly different white Barbera with something of a red wine’s tannins – bright, clean, grippy with a long, mouthwatering finish. Fans of Fiano, Falanghina and Timorasso should pencil it down.

Try with freshwater fish like trout or pike, or with smoked eel.
