THE WINE
Aedes is a recent addition to the I Custodi lineup, crafted to highlight the freshness and vitality of young Carricante vines. This bright and vibrant Etna Bianco is bursting with aromas of stone fruit and apple skin, with a distinctive Etna character. The wine showcases the unique terroir of Mount Etna, with fruit sourced from 10-year-old bush vines planted in mineral-rich volcanic soils. Fermented with native yeasts and aged entirely in stainless steel, it preserves its vibrant acidity and develops a textured mouthfeel. The wine opens with aromas of white oleander and ripe stone fruit, followed by subtle herbaceous and anise notes. Its lightly concentrated mid-palate finishes with a signature salty, volcanic note, resulting in a complex, lively profile.
