La Raia Gavi DOCG Pisé (2017) – Piemonte

THE WINE
Pisè is the Cru of La Raia winery whose grapes come from the oldest vineyards located approximately 400 meters above sea level with the best-suited exposure for Cortese grape in the area, which is south-west. As a result, La Raia wines are among the most extraordinary expression of biodynamic certified wines, showing balance and perfection. The wine is left on native yeasts in stainless steel tanks for 20 months, and the prolonged period on dead yeast brings incredible complexity and a long-living potential to the wine. On the nose, the aroma is broad and concentrated flower notes, accompanied by ripe fruit, pear and honey—Rich in mouth, warm and harmonic with moderate but persistent acidity.

THE PAIRING 
Excellent with all seafood, which compliments its saltiness and fleshy delicacy. It is the perfect match also for vegetable risotto and medium-aged cheese.
