Cannonau. 


THE WINE
With Ghirada meaning in the local dialect a small portion of a vineyard, or a Cru, this wine represents a very select area of Vike Vike’s production. The vines are situated on average 736 metres above sea level resulting in strong temperature fluctuations between the day. The soil is predominately granite. 

Simone Sedilesu places his primary importance on the work in the vineyard and would rather intervene as little as possible in the cellar. The Cannonau grapes are hand harvested in early October and undergo maceration for 15 days. Ageing is done in Slovenian oak for 1 year before additional ageing in stainless steel for 6 months without fining or filtering. 

As typical of Cannonau, this wine is a full bodied one that deserves to be drunk with a meal to fully appreciate its depth. Savoury elements dominate on the nose ranging from rosemary to scrub to mature tomatoes. The silky texture of Cannonau is reflected in the mouth with a density accentuated by further herbaceous notes and a grounding element of wild mushrooms. A wine that deserves contemplation.
