THE GRAPES
Sparkling red wine made from a blend of the rare Lambrusco di Montericco, Malbo Gentile, Lambrusco Grasparossa, and Sgavetta
THE WINE
The grapes come from vineyards located between 150 and 230 meters above sea level, facing east, on gravelly soils rich in sandstone and sandy interlayers from ancient terraces in the Broletto and Vendina areas. The harvest is manual, using small 15 kg crates to preserve the integrity of the grapes and allow careful selection. After harvesting, the grapes are left in the cellar overnight before pressing to achieve natural cooling. This is followed by approximately 10 days of maceration fermentation. The skins are then softly pressed manually. The free-run juice is cooled and added to the base wine before bottling, initiating natural bottle fermentation, which completes in about three months, followed by continuous ageing.
Il Sottobosco has a ruby-red color with persistent foam. The nose is rich with red fruit scents, while the palate is savory and fresh, with lively tannins. Serve Il Sottobosco chilled to enjoy its refreshing and vibrant character, capturing the unique essence of its terroir. don't drink it too chilled.
