Hand-picked olives are pressed the same day at the Castello di Monsanto mill to preserve the aromas and nutritional value.
With a clear commitment to production quality in the DOP, this Tuscan olive oil has a style that is less rich but more aromatic and characterful than equivalents from other regions – mainly from the south, particularly Puglia.
The colour is a vivid shade of green, which becomes yellowed with time. The striking aromas are fruity and fresh, with nuances reminiscent of chlorophyll, while it is fragrant, well-balanced and rounded on the palate. The oil has a slight spiciness and a pleasant bitter taste, typical of the Frantoio variety.
