THE WINE
A wine and a grape variety unusual for our Liguria, which over time has forgotten the ancient traditions related to the cultivation and winemaking of Granaccia (a relative of the nearby French Grenache). Giada, the winemaker, has decided to give value back to the Granaccia grape that her grandfather used to cultivate, and the result is astonishing, called 'Ego.' The wine is produced with a week-long maceration on the grape skins. Subsequently, spontaneous fermentation takes place in steel without the addition of artificial yeasts. The aging is done in oak barrels for a year, and then the wine rests for some time in the cellar before being put on sale. A concentrate of red fruits, grape juice, and a light final spiciness make the wine agile. You can drink it chilled, for an aperitif or paired with a first course!
