THE GRAPE
100% Carricante from the Caselle vineyard on Etna's eastern slopes at 850m altitude, bush-trained alberello vines on rich volcanic pumice and mineral soils. Carricante is celebrated for its high acidity and mineral qualities, thriving in the volcanic soils of Mount Etna. 

THE WINE
This wine comes from a vineyard perched at almost 900 meters above sea level in the Contrada Caselle area, in the town of Milo, on the eastern side of the volcano. The name "Imbris" comes from Latin, meaning "rain," a nod to the region's distinctive climate, marked by salty winds from the Ionian Sea and high humidity.
Golden straw with green highlights. Complex nose of orange blossom, jasmine, ripe pineapple, flint, and volcanic ash. Full-bodied palate with creamy texture from lees aging, vibrant citrus acidity, saline minerality, and long smoky persistence. Fermented and aged 12+ months in oak barrels—profound Etna Bianco expression.

THE FOOD PAIRING
This versatile white wine pairs excellently with a variety of dishes, particularly those featuring seafood. Roasted fish, tuna steaks, pasta with sea urchin, aged sheep cheeses—perfect for bold Sicilian seafood.

THE WINEMAKER
I Custodi ("The Guardians") protect Etna's ancient traditions. Mario & Manuela Paoluzi collaborate with vigna legend Salvo Foti (I Vigneri) to revive historic vineyards using pre-phylloxera methods. Their Caselle Bianco showcases Carricante's mineral depth from extreme terroir—true guardians of Etna's soul.



 

THE WINERY
I Custodi, established in 2007 by local owner Mario Paoluzi, is dedicated to producing exceptional wines from the volcanic soils of Mount Etna. The winery collaborates with renowned Etna expert Salvo Foti and employs traditional viticulture methods, including the use of ancient albarello bush vines, some over 150 years old. Their commitment to organic farming and sustainable practices reflects a deep respect for the environment and the unique characteristics of the Etna region.
