“Casefatte” Campania Fiano IGT, Boccella (2018) - Campania
This Fiano arises from a tiny little production in Castelfranci, outside of the Designation of Origin regulation.
This wine takes you off the beaten track of the well-known Fiano based wines.
This Fiano ferments and ages in big wood casks and ages for two further months in the bottle. It's a very mild orange, only three days in contact with the grape skin; I would rather say it's an "almost" orange. No filtration.
Sweet, spicy and honey notes on the nose, ample body in the mouth, long and persistent.
As the grape Fiano is well-known for its ability to age, this wine can refine with age and develop more spices and nutty notes.
Food pairing: savoury glazed light meats like orange-rosemary roasted chicken and soy-glazed salmon
