THE WINE
Carat di Bressan is a white wine that mirrors a field blend from the past, the assemblage of the traditional varieties of Friulano, Malvasia and Ribolla Gialla grapes, which have for centuries thrived in their ideal habitat on the sandy marl slopes of the Collio.
CARAT is one of the gems of Friuli, a lively and harmonious wine, with a bouquet full of ripe fruits – apricot, peach, melon - with notes of orange zest, acacia, honey, walnut and a subtle hint of almond. It is sumptuous, enveloping, fresh, balanced and persistent on the palate. A natural aenoic pearl. Ecstatic! Slight maceration on the skins, spontaneous fermentation, sur lie ageing partly in barriques and partly in oak barrels of 20 hectolitres with batonage for approximately a year. It was assembled in stainless steel, followed by a short maturation of about 3 months. Suitable for further ageing.

Fulvio studied in France, Bordeaux, with the director of Margaux, his mentor.

Spicy slow-cooked shoulder, kebabs, lamb (and mutton) tagines and biryanis, Grilled or roasted aubergine, grilled octopus, halloumi and manchego.
