Sparkling Rosato

THE GRAPE 

Sgavetta and rare native varieties


THE WINE 
Produced using the bottle fermentation method. The grapes come from vineyards located at an altitude of 150 meters above sea level, situated on gravelly soils with high levels of silt and gypsum formations. After manual harvesting, the grapes are left in the cellar overnight for natural cooling. They are then destemmed and directly pressed in a small manual press. The free-run juice is cooled during pressing and added to the base wine before bottling, initiating natural bottle fermentation, which completes after about three months. The wine then undergoes a long aging process in the bottle.

Tre Dame presents as a rosé with light fermentative notes, mineral nuances, and hints of small wild berries. It boasts excellent acidity accompanied by subtle tannins, making it a refined and refreshing sparkling rosé that captures the essence of its unique terroir. 


THE PAIRING
perfect on its own on a sunny day or paired with anitpasti, italian cured meat and fat dishes in general as acidity cut the fat through and marries perfectly with richness.
