THE GRAPE
Moscato, Malvasia aromatica, Spergola
THE WINE
The grapes are harvested extra-ripe and dried for three months in a wooden drying room to maintain optimal humidity and allow for slight temperature fluctuations, achieving harmonious fruit dehydration. The grapes are meticulously selected one by one the day before pressing, with the skins left to macerate during fermentation for at least 15 days, followed by gentle and prolonged pressing of the skins. The wine is aged for 12 months in stainless steel vats and 36 months in old oak barrels.
The resulting wine is amber-coloured, with deep floral notes and chestnut honey. It offers a warm balance between vibrant sweetness and a persistent tannic structure. No sulfites are added. The average annual production is 1,000 bottles of 500 ml each.
