“AETNEUS” Etna Rosso DOC, I Custodi (2012) - Sicilia

Mount Etna is a current darling of the Italian wine scene, and I Custodi is among the 21st-century Etna Renaissance producers who are now making wines as compelling as the active volcano’s cooled lava flows. Purplish red. In the nose, it's fresh, clear, precise, very elegant with cherry and raspberry notes as well as some funk and earth. A bit burgundian in profile. On the palate, it's lean, very direct, finely woven with fairly strong acidity and very fine and elegant tannins. The acidity drives the long and savoury finish. Excellent.
Also, part of the grapes come from an 150 years old vine : a precious rarity.
Food pairing : perfect with meat like Roast Pork, Meat Balls, Meatloaf, Steak, Sweet and Sour Pork, Barbecue Short Ribs, Pork Sausage.
