THE WINE
Manually selected grapes are left to dry for a period of 4 months after which, with reduced water and increased sugar concentration is fermented in oak and chestnut barrels. The nose is intense and complex with notes of dried fruits such as chestnut and hazelnuts, and then leave space to appetizing sweet apples of apricot, fig and raisins and honey. In the mouth is very soft and dense, and the sensations of sweetness and pseudo-heat are well balanced by acidity.
THE PAIRING
as this Vinsanto is not overly sweet can be a fantastic option alongside less-sweet desserts like ginger cookies or simple dried fruit.
