THE GRAPE 
Nebbiolo (Chiavennasca).


THE WINE
Ronco del Picchio is a Sforzato, which means "strained". It's therefore made with the
appassimento method (similar to an AMARONE), which consists in lying harvested grapes on straw mats to dry for several months. For these wines, grapes are dried in small boxes in the ventilated room till mid-December. It's then barricaded for one year. Intense garnet red, it receives a broad and decisive scent of black cherry, morello cherry, confectioned plum, liquorice, leather, and sweet spices from these treatments. Warm and soft on the palate, it is robust and exceptionally persistent., similar to Amarone, by laying harvested grapes on straw mats to dry for several months.

 

THE PAIRING 
Since Sforzato is a powerful wine, it should be paired with equally powerful foods: strong cheese, roasted meats, grilled meats, stews or rich foods. Roasted Lamb, Grilled Ribeye, Blue Cheeses, Gorgonzola, Fontal Cheese, Truffles and Polenta.
