Ca' de Noci, “Tre Dame” Emilia IGT – 2018 (Emilia Romagna)
Grape : Sgavetta.
Re-fermented in the bottle wine based on rare indigenous grape red variety. Super light and sherbert-like rosé sparkling wine with foamy bubbles. Raspberry fruit paired with some herbaceous spice make it incredibly refreshing and fun, with mineral notes.
Food pairing : perfect on its own in a sunny day or paired with anitpasti, italian cured meat and fat dishes in general as acidity cut the fat through and merries perfectly with richness.
