THE GRAPES
50% Procanico, 30% Verdello, 20% Malvasia
THE WINE
"Musco" is crafted from a small vineyard where Procanico, Verdello, and Malvasia grapes are traditionally interplanted. Produced using ancient tools in a hand-dug tuff cave beneath a chestnut forest without electricity, this wine matures in chestnut barrels and ages in demijohns and bottles for several months. The wine is manually bottled. It has a brilliant, intense golden colour and an enveloping, complex nose of ripe yellow fruit, almonds, candied citrus peels, dried citrus, chestnut honey, and aromatic herbs. On the palate, it is structured, silky, and smooth with a well-integrated acidic and slightly savory streak, making it balanced. The wine has a long, slightly bitter finish. The grapes are hand-harvested. The must undergoes a 4-6 day maceration with skins in open chestnut vats without punching down. Pressing is done with an old manual press. Fermentation with natural yeasts occurs slowly in chestnut barrels for 1-2 months. The wine matures for 1 year in chestnut barrels, 8 months in glass demijohns, and then in bottles in the tuff cave for at least 4 months before release. Production: 1600 numbered bottles.
