THE WINE 
The Franciacorta Dosaggio Zero by Arcari Danesi is a vintage sparkling wine produced according to the SoloUva Method, without the addition of exogenous sugar, aged for 31 months on the lees in the bottle. 
This is a wonderfully dry, sharp, and vibrant Italian Champagne - Franciacorta: with notes of stone fruit, citrus and yellow fruits with a kick of gooseberry  Biscuit certainly shows through. Wonderful Italian sparkling brut. Lots of brioches, orange citrus and beautifully balanced acid on the palate with a full body and lasting finish.Made from a combination of Chardonnay and Pinot Blanc, this Italian sparkling wine displays a rich straw-yellow colour.  


THE PAIRING 
An excellent wine echoes the purity of shellfish and raw/cured fish such as bottarga, and fat fish as the dry and mouthwatering acidity will clean your palate.
