THE WINE
This is not A Barbera but THE Barbera.
It encloses in it both a silky feminine velvet palate along with a strong complex bold character. Barbera grapes are grown in Barbaresco, on poor soils, rich in mineral salts. Fermented with Native yeasts and aged both in stainless steel and large Slavic oak barrels for 20 months plus 12 months in the bottle. In the glass it has an intense ruby red with garnet reflections.
The aroma is complex, smelling of fruit in spirit (cherry, plum, black cherry), it is slightly spicy (cinnamon, cloves) with a bitter chocolate finish. Mouth of good tannic balance, intense, warm, persistent and of particular elegance and depth.
The family practices organic farming — the utmost respect given to the earth — with all the vine care done manually. Their logo, sketched by a close friend, depicts a real-life encounter between their dog, Patata, their cat, Mimi, and a swallow.
It perfectly represents the harmony they strive to achieve with their land and in their wines.
THE PAIRING
rich dark meats, mushrooms, herbs, herbaceous cheeses like blue cheese, higher tannin foods like root vegetables & braised greens. The idea here is that the bright acidity in the wine will make a rich fatty or high tannin dish.
