THE GRAPE 
Spergola. 

It's a variety that risked extinction, but some sensible winemakers have managed to save it—characterised by floral and fruity notes of green apple. 

THE WINE 
Obtained with the method of refermentation in the bottle - ancestral method. Short maceration on the skin overnight. The free-run juice (mosto fiore) is added to the base wine again before bottling. 

Golden colour, fresh yellow apple which tends to candied, acidity, saltiness.
4,500 bottles produced in total.
No added sulphite.

FOOD PAIRING 
White meat, rabbit, cheese, fried fish, and fried vegetables.
