The Grape
Corvina, Corvinone.
The Wine
Valpolicella - Fresh, savoury flavour, with light tannins and light spice. A part of the grapes is then dried in order to provide a pleasant roundness to the wine. After the fermentation, part of the wine will age for 12 months in oak barrels and stainless steel tanks followed by 6 months in the bottle.
The Pairing
Ideal for lasagna, red meat, steak tartare and fresh and seasoned, flavoured cheeses.
