THE WINE
Marco Fay - who has taken over hos dad Sandro - practices organic viticulture and opts for shorter maceration times and barrique-barrel aging for 12 months. The result is a wine that is fresh, familiar and extremely elegant. Powerful yet subtle, intensely expressive yet modest enough to complement various food. In other words: a Pinot Noir in Nebbiolo clothing.


THE PAIRING
fattier poultry dishes, seared ahi tuna, beetroot salad, a cheese plate of aged parmesan and prosciutto. Undoubtedly with the locals eat, in this case, bresaola, a cured beef.
