THE GRAPE
Cannonau, Monica and various local grapes 


THE WINE
 
Taking its name from the Sardinian dialect term for sun, Sobi is a vibrant red that lends itself to easy drinking. It is crafted from a blend of indigenous grapes including Bovale Sardo, Cannonau, Monica and a field blend of Carignano, Barbera, Cagnulari and Pascale. Vines are between 30 to 70 years old, as befitting the project of Bentu Luna to restore historic vineyards.

In the glass it is an intensely dark crimson with some purples reflections. A floral bouquet with notes of violet and tobacco. In the mouth there is a lively minerality with black cherry and pepper, structured by tight tannins.


THE PAIRING
A perfect accompaniment to a rich pasta dish, perhaps a pasta alla norma, for an invigorating pairing.
