I Custodi ANTE Etna Bianco DOC (2021) - Sicilia
THE GRAPE
Predominantly crafted from Carricante, a white grape variety indigenous to Sicily. Carricante is celebrated for its high acidity and mineral qualities, thriving in the volcanic soils of Mount Etna. The 2021 vintage also includes small proportions of Minnella and Grecanico, contributing to the wine's complexity.
THE WINE
A vibrant wine born from the volcanic soils of Mount Etna, grown at 750 meters above sea level. This Etna Bianco DOC dazzles with a golden hue and a fresh, lively profile. On the nose, it offers bright aromas of citrus, ripe apples, and juicy peaches, with a hint of anise and almond. The palate is crisp and zesty, with refreshing acidity and a touch of salinity, giving it a unique edge. A long, smooth almond finish lingers, adding depth and complexity to this beautifully balanced white.
THE PAIRING
This versatile white wine pairs excellently with a variety of dishes, particularly those featuring seafood. Its crisp acidity and minerality complement grilled fish, seafood sautéed with lemon and garlic, and light pasta dishes. Additionally, it enhances salads with goat cheese and fruit, as well as refined risottos enriched with a hint of saffron.
