Pinot Noir Blauburgunder Südtirol DOC, – 2016
Grape : Blauburgunder (Pinot Noir).
Light earthy and dried vegetal notes on the nose, very light hint of bacon, predominantly red berries, hint of tobacco and tar, dried floral traces. Clear, fairly cool, tart, juicy fruit on the palate, smoky, earthyn nutty and dried vegetal notes, youthful, slightly sandy tannins, still very slightly astringent, touch of dark chocolate, moderate acid bite, good, tart, slightly smoky finish. Aged in French/ German oak barrels (from two- to 10-years old) for one year; then in tank for six months. Bottled with light filtration. Organic. Indigenous yeasts.
Food Pairing : Air-dried salami; grilled chicken with herbs; smoked meats.
